Gluten Free Dairy Free Almond Cake

Ingredients:

Dry Ingredients
 2 cups Ground almonds
 1 cup Gluten free flour blend (I used Doves Farm, any brand should work)
 ½ tsp Baking soda
 1 tsp Baking powder
 100 g Medjool dates, pitted
Liquid Ingredients
 1 cup Almond milk (I used Alpro Unsweetened)
 1 dash Vanilla extract
 1 tbsp Apple cider vinegar
 ¼ cup Rapeseed oil (Coconut oil will also work)

Directions:

Preheat the oven to 180°C.

In a bowl, add all dry ingredients, without the dates. Mix well.

Add almond milk, oil, vinegar, and dates in a blender and blend for 1-2 minutes or until completely smooth.

Combine dry and liquid ingredients and stir until nice smooth thick batter forms.

Pour batter into a silicone mould (I got mine from Ikea, it's the perfect size!). Alternatively, if you don't have a silicone mould, you could use a baking tin lined with non-stick baking paper.

Bake for 40-50 minutes or until a toothpick comes out dry.

Take out of silicone mould and leave on a cooling rack to cool.

Enjoy on its own or served with ice cream or yogurt.
